The gap between a domestic and a commercial gas job is enormous, and it is a mistake to price one as if it were the other. A home installation is usually a single appliance — a hob or a gas water heater — fed from one cylinder through a regulator and an approved flexible connector, with a leak test at the end. A gas installation is more than a pipe from the bottle to the burner. A properly specified job includes the correct regulator (two-stage for larger commercial loads to hold steady pressure), an isolation valve so the supply can be shut without disconnecting anything, hard piping in an approved metal with correctly made joints, an approved flexible connector only at the appliance tail, and a pressure/leak test on completion with the result recorded. For commercial kitchens, add an emergency shut-off valve within reach of staff, a gas detector positioned for the fuel in use, and adequate high-and-low ventilation to the cylinder store. For a commercial F&B premises it is longer, and it is far cheaper to get right at fit-out stage than to retrofit after a failed inspection. Gas safety comes down to three habits: detect early, ventilate always, and act correctly. Detection follows the fuel — LPG detectors sit low because the gas pools at floor level, NG detectors sit high because it rises — and the mercaptan added to both fuels gives that unmistakable smell as a first warning. Cylinder stores need ventilation at high and low level so any escape disperses instead of accumulating. And everyone in the building should know the response to a suspected leak: shut the cylinder or isolation valve, do not touch any electrical switch or naked flame, open up for ventilation, and get the system checked before using it again. Where a job lands in these bands depends on the number of appliances, the run length and concealment, the cylinder-store arrangement and the level of detection and safety kit specified.
