The right type is a function of how much FOG the kitchen produces and how much room there is — a small café and a full-service restaurant are genuinely different specifications, not the same unit at two sizes.

The right cleaning frequency is the one that empties the trap before it stops working — and that depends entirely on how hard the kitchen runs. A general rule of thumb is that a trap should be serviced before it is about a quarter full of grease and solids; in practice a busy restaurant may need its under-sink trap serviced weekly to monthly, while a larger in-ground interceptor at the same outlet is pumped out quarterly. A quiet café produces less FOG and can go longer between services. The wrong approach is to wait until it smells or blocks — by then it has already failed. The reliable approach is a fixed cycle set from the trap size and the kitchen’s load, adjusted after the first few services once the real fill rate is known. Emptying a grease trap properly is more than skimming the top. A full service removes the floating grease layer and the settled food-solid sludge at the bottom, scrapes down the baffles and walls where grease cakes on, inspects the baffles and inlet/outlet for damage or bypass, refills or resets the trap as required, and — crucially — removes the collected FOG waste for proper disposal rather than tipping it into another drain. A half-service that skims the grease but leaves the bottom sludge simply shortens the time to the next blockage.
