A bar or pub fit-out is decided behind the counter and above the ceiling: a working bar with water, drainage and power in the right places, cold storage sized for the drinks you sell, noise kept away from the neighbours, and finishes that survive spills and late nights. Check the premises' approved use, the landlord's rules and the liquor licensing position before you sign. What a bar fit-out involves

A bar looks like a counter, some seats and good lighting. The work that makes it trade is less visible: water and drainage along the whole working bar, fridges and cold storage that do not overheat the room, power for glass washers, ice machines and coolers, an extraction system if food is served, and a room that keeps its music inside. Get those right and the look can be anything from a quiet cocktail bar to a busy sports pub.

Premises, approvals and liquor licensing

Before signing, check that the unit's approved use suits a bar, that the landlord or building allows one, and who the neighbours are. Residential units above or beside the premises change how much acoustic work you need and what hours are realistic.

The working bar and back bar

Design the bar from the bartender's side first. The working side needs a clear, repeatable flow: glasses, ice, drinks, garnish, service, then used glasses back to the wash. Everything the bartender reaches for most should be within a step or two.

Fridges under a closed counter need somewhere for their heat to go. Plan grilles or vents in the counter and keep enough space around each unit, or they will run hot and fail early.

Cold storage, kegs and ice

A small cocktail bar may manage with under-counter coolers. A pub pouring draught beer usually needs a cold store for kegs, a route for the beer lines to the taps, and space for deliveries. Water, drainage and grease

Every metre of working bar is wet. Plan water points and drains for the sinks, glass washer, ice machine and any trough drain along the bar, and give the floor behind the counter a fall to a drain. Noise: keeping the music inside

Noise complaints close bars faster than almost anything else. Separate the two problems: sound escaping to neighbours, and sound bouncing around inside so the room feels harsh and people shout.

  • To neighbours: heavier, sealed walls and ceilings, a solid entrance or a lobby with two doors, and speakers kept off shared walls and ceilings.
  • Inside: absorbent panels and ceilings so conversation is easier and the music does not need to be louder.
  • Doors and windows: the weakest point in any sound-rated wall; seal them properly.

Aircon, ventilation and kitchen exhaust

A full bar is warm: people, lights and every fridge compressor add heat. Size the aircon for the busiest night and bring in fresh air.
