Frying hard every day? Here is when a stainless worktop beats stone, what to specify, and how to keep it looking right.

A stainless steel worktop is the practical choice for the hot, wet end of a Malaysian kitchen: it takes direct heat, cannot swell or stain, and wipes clean with strong degreasers. Specify grade 304, not 201, a sheet stiff enough not to drum or dent, and welded or integrated sinks. It scratches and shows fingerprints, so many homes use it only at the wok and sink run. Commercial kitchens are built in stainless steel for reasons that also apply at home. For a family that fries hard every day, that makes stainless the worktop that never needs babying. It is not the prettiest top and it is not quiet, which is why most homes use it for one run rather than the whole kitchen. Stainless steel is steel with chromium added; once there is 10.5% chromium or more, a thin passive film forms and stops rust, healing itself when scratched as long as oxygen reaches the surface. Grade 304 is the classic “18/8” (around 18% chromium, 8% nickel) and the normal grade for kitchen surfaces.
Grade 201 looks identical when new and costs less, because manganese replaces much of the nickel. In a wet kitchen with cleaning chemicals it marks and rusts sooner. A magnet cannot tell 201 from 304, since both are essentially non-magnetic, so the only practical defence is to have the grade written on the quotation and the invoice. Sheet thickness is what separates a solid top from a tinny one. Thin sheet flexes and pops under hand pressure and dents at the first knock. ClickBina's stainless guides advise asking for the gauge on every metal quotation, and for sinks they suggest 304 at 1.2–1.5 mm.
A domestic worktop is usually a folded sheet over a supporting frame or bonded to a board underneath, which stiffens it and deadens the drumming sound when you put a pot down. Ask how the top is supported, whether the front edge is folded down and returned, and how the back upstand is formed so water cannot get behind it.
The strongest argument for stainless is the sink. A bowl welded into the top, with a drainer pressed into the same sheet, leaves no rim, no silicone line and no joint for water to find. Long runs and L-shapes can be welded and polished so the top is one piece. That is exactly how commercial prep tables are made, and it is why they survive daily hosing.

Stainless tolerates direct heat that would scorch quartz resin or mark solid surface, so a pot straight off a high-output burner can go down without a trivet. Grease wipes off and degreasers do not harm it, which is why commercial kitchens are built in it.
That is why a stainless run beside the wok burner is a genuinely practical choice in a Malaysian wet kitchen, even when the rest of the house is in stone or laminate.
