A stainless cabinet is a carcass and doors folded from steel sheet, usually over an internal frame, with the visible faces in a brushed or hairline finish. The critical specification is the grade. Grade 304 is the usual choice for kitchen surfaces because its chromium and nickel content gives it good resistance to the acids, salt and moisture a kitchen throws at it. Cheaper grade 201 substitutes manganese for much of the nickel; it costs less and is more prone to surface tea-staining and pitting in humid, coastal or chlorinated air. This is the round both metals win against timber-based cabinets, but they win differently. Aluminium does not rust; its oxide layer is self-repairing, so a scratch through the powder coat does not start a spreading corrosion front the way it does on steel. What aluminium dislikes is galvanic contact — aluminium bolted directly to dissimilar metal in a wet environment corrodes at the join — and prolonged contact with wet cement or lime, which attacks it.
